Ingredients

1 lb lean ground beef
1 tbsp olive oil
1 small yellow onion, finely diced
1 bell pepper, finely diced
2 cloves garlic, minced
1 cup tomato sauce (no sugar added)
2 tbsp tomato paste
1 tbsp maple syrup
1 tbsp yellow mustard
1 tsp apple cider vinegar
1/2 tsp smoked paprika
Salt and black pepper to taste


Instructions

Heat olive oil in a large skillet over medium heat.
Add onion and bell pepper, sautéing until softened, about 5 minutes.
Add the ground beef and cook until browned, breaking it apart with a spoon.
Stir in the minced garlic and cook for 1 minute until fragrant.
Add the tomato sauce, tomato paste, maple syrup, mustard, vinegar, and paprika.
Stir well to combine and reduce heat to low.
Simmer for 10-15 minutes until the sauce has thickened and flavors have melded.
Season with salt and pepper to taste and serve warm.

Notes

Store leftovers in an airtight container for up to 3 days in the refrigerator. To serve, spoon over toasted gluten-free buns or atop halved roasted sweet potatoes. Add a pinch of red pepper flakes if you prefer a slight kick.
