It delivers a crisp, succulent texture and a complex flavor profile while remaining wholesome, satisfying, and quick to prepare in under 30 minutes.


Ingredients

1.5 lbs chicken breast, cut into bite-sized pieces
2 tablespoons avocado oil or coconut oil
1/3 cup coconut aminos
2 tablespoons fresh lime juice
1 tablespoon toasted sesame oil
1 tablespoon honey or maple syrup
1 teaspoon freshly grated ginger
2 cloves garlic, minced
1 tablespoon sesame seeds
2 scallions, thinly sliced
Salt and black pepper to taste


Instructions

In a small bowl, whisk together coconut aminos, lime juice, honey, ginger, and garlic to create the sauce.
Heat the oil in a large skillet or wok over medium-high heat.
Add the chicken pieces to the pan in a single layer and sear until golden brown and cooked through, about 6-8 minutes.
Pour the sauce over the cooked chicken and stir constantly for 2-3 minutes until the sauce reduces and glazes the chicken.
Remove from heat and garnish with toasted sesame seeds and sliced scallions.
Serve immediately over steamed brown rice or cauliflower rice.

Notes

Ensure you pat the chicken dry before searing to achieve a better crust. If you prefer more heat, add a pinch of crushed red pepper flakes to the sauce.
