Description

These innovative cabbage burgers offer a sophisticated twist on a classic comfort food. A sturdy, thick-cut cabbage round acts as a flavorful, crisp base for a savory, seasoned ground beef patty. As they roast in the oven, the cabbage edges caramelize to perfection while the meat stays juicy and tender. It is a nourishing, vegetable-forward dinner that minimizes cleanup and maximizes flavor, making it a perfect, wholesome staple for busy weeknights.

Ingredients

1 medium head of green cabbage, sliced into 1-inch thick rounds
1 lb lean ground beef or ground turkey
1 small yellow onion, finely minced
2 cloves garlic, minced
1 tsp smoked paprika
1/2 tsp dried oregano
Salt and black pepper to taste
2 tbsp olive oil
Fresh parsley for garnish

Instructions

Preheat your oven to 400°F (200°C) and line a large rimmed baking sheet with parchment paper.
Brush both sides of the cabbage slices lightly with olive oil and season with a pinch of salt and pepper.
Place the cabbage rounds in a single layer on the prepared baking sheet.
In a mixing bowl, combine the ground beef, minced onion, garlic, smoked paprika, oregano, salt, and pepper until well combined.
Shape the meat mixture into patties that match the diameter of the cabbage rounds.
Place one meat patty onto the center of each cabbage round.
Bake for 30 minutes, or until the cabbage is tender at the edges and the meat is fully cooked through.
Remove from the oven, garnish with fresh parsley, and serve hot.

Notes

Ensure you slice the cabbage thick enough so it maintains its structure during roasting. If the cabbage appears to be browning too quickly, you can tent the pan with foil for the first 15 minutes. For extra flavor, sprinkle a little parmesan or shredded cheese on the patties during the last 5 minutes of baking.
