Ingredients
1 lb lean ground turkey
2 cups sweet potatoes, peeled and cubed into 1/2 inch pieces
1 large yellow onion, diced
1 red bell pepper, diced
2 cloves garlic, minced
1 tablespoon olive oil
1 teaspoon smoked paprika
1 teaspoon ground cumin
1/2 teaspoon salt
1/4 teaspoon black pepper
Fresh parsley for garnish
Instructions
Preheat your oven to 400°F (200°C).
Toss the cubed sweet potatoes with half the olive oil, salt, and pepper on a baking sheet and roast for 15 minutes.
While potatoes roast, heat the remaining oil in a large skillet and sauté the onion and bell pepper until soft.
Add the ground turkey to the skillet, cooking until browned and fully cooked through.
Stir in the garlic, paprika, and cumin, cooking for 1 minute until fragrant.
Combine the roasted sweet potatoes with the turkey mixture in a casserole dish.
