Ingredients
1.5 lbs chicken breast, cut into bite-sized pieces
2 cups broccoli florets
3 cups fresh baby spinach
4 cloves garlic, minced
4 oz cream cheese, softened
1/2 cup shredded mozzarella cheese
2 tbsp olive oil
1/2 tsp salt
1/4 tsp black pepper
1/2 tsp dried oregano
Instructions
Heat olive oil in a large skillet over medium-high heat.
Season chicken with salt, pepper, and oregano, then add to the skillet and cook until golden brown and cooked through.
Remove chicken from the skillet and set aside.
In the same skillet, add the broccoli florets with a splash of water, cover, and steam for 3-4 minutes until tender-crisp.
Stir in the minced garlic and cook for 1 minute until fragrant.
Reduce heat to low and stir in the cream cheese until smooth and creamy.
Add the chicken back into the skillet, toss to coat, and fold in the fresh baby spinach until just wilted.
Top with mozzarella cheese, cover briefly until melted, and serve immediately.
Notes
Store leftovers in an airtight container in the refrigerator for up to 3 days. Use Greek yogurt instead of cream cheese if you prefer a lighter, tangier sauce.
