Description

Decadent, healthy bites combining antioxidant-rich blueberries, protein-packed lactose-free Greek yogurt, and 80% dark chocolate. A no-bake, freezer-friendly snack for clean eating.


Ingredients

Scale

1 1/2 cups fresh blueberries
1/2 cup lactose-free Greek yogurt
1/4 cup 80% dark chocolate (shavings or meltable chunks)
1/4 cup cacao nibs (optional)
Pinch of sea salt


Instructions

Line a baking sheet with parchment paper and freeze for 10 minutes.
Mash blueberries slightly with a fork, leaving some whole.
Spoon 1 tablespoon yogurt onto the tray around 2-3 blueberries.
Roll the yogurt-blueberry cluster into a ball using a fork.
Place on frozen tray and repeat with remaining ingredients.
Melt dark chocolate in a small bowl using a microwave or double boiler.
Dip each frozen yogurt ball into the melted chocolate, covering 3/4 of the surface.
Sprinkle with cacao nibs and sea salt if using.
Return tray to freezer for 1.5 hours, then store in a sealed container.

Notes

Store in an airtight container in the freezer for up to 3 weeks.
Can substitute raspberries or blackberries for blueberries.
Use a silicone mold for uniform shapes instead of a baking sheet.
