This casserole swaps processed soups for creamy Greek yogurt and uses fiber-rich brown rice, lean chicken breast, and fresh vegetables to create a satisfying, balanced dinner that the whole family will enjoy without the heaviness of traditional recipes.


Ingredients

1.5 lbs boneless skinless chicken breast, cubed
1.5 cups uncooked brown rice
3 cups low-sodium chicken broth
1 cup plain Greek yogurt
2 cups broccoli florets, chopped
1 cup carrots, diced
1/2 onion, finely chopped
2 cloves garlic, minced
1 tsp dried thyme
1 tsp paprika
Salt and black pepper to taste


Instructions

Preheat your oven to 375°F (190°C).
In a large bowl, combine the uncooked brown rice, diced chicken, chopped broccoli, carrots, onion, and minced garlic.
Stir in the Greek yogurt, chicken broth, thyme, paprika, salt, and pepper.
Transfer the mixture into a large greased casserole dish.
Cover the dish tightly with aluminum foil to trap the steam.
Bake for 45 minutes.
Remove the foil and bake for an additional 5-10 minutes if more hydration reduction is needed.
Let the casserole rest for 5 minutes before serving.

Notes

Ensure the foil is sealed tightly to allow the brown rice to cook through properly in the liquid. If the rice is still firm after 45 minutes, add a splash of broth and bake for another 10 minutes. Store leftovers in an airtight container for up to 3 days.
