Description

Elevate your morning routine with this vibrant and nutrient-dense avocado toast. Featuring creamy mashed avocado on crispy, golden-brown baguette slices, this dish is topped with a sophisticated pomegranate salsa that offers a tart, crunchy, and refreshing contrast. Infused with aromatic shallots, fresh parsley, and a touch of zesty jalapeño, this heart-healthy recipe balances rich monounsaturated fats with brilliant acidic notes. Perfect for elegant brunches or a quick, gourmet lunch, this dish is as visually stunning as it is delicious and provides a high-fiber, energizing start to your day.

Ingredients

4 baguette slices
2 ripe avocados
1/2 cup fresh pomegranate arils
1 small shallot, finely minced
1 jalapeño, seeded and finely diced
2 tablespoons fresh parsley, chopped
1 tablespoon extra virgin olive oil
1/2 lime, juiced
Salt to taste
Black pepper to taste

Instructions

Preheat your oven or toaster oven to 375°F.
Brush baguette slices lightly with olive oil and toast for 10 minutes until golden and crisp.
In a small bowl, combine pomegranate arils, minced shallot, diced jalapeño, chopped parsley, and lime juice. Stir well and set aside.
In a separate bowl, mash the avocado with a pinch of salt and black pepper until smooth but slightly chunky.
Spread the mashed avocado generously over each toasted baguette slice.
Top the avocado-laden toast with a spoonful of the pomegranate salsa mixture.
Serve immediately while the toast is warm and crispy.

Notes

Ensure your avocados are perfectly ripe by checking that they yield slightly to firm pressure. You can adjust the heat by adding more or less jalapeño depending on your tolerance. If serving for a crowd, you can prep the salsa up to an hour in advance, but keep it chilled until just before assembly.
