Ingredients
1 lb shrimp, peeled and deveined
2 tbsp olive oil, extra virgin preferred
1 tsp garlic powder or 2 cloves fresh garlic, minced
1 tsp paprika
4 large flour tortillas
2 cups romaine lettuce, shredded
1/2 cup seasoned croutons
1 egg yolk
2 tbsp fresh lemon juice
1/4 cup olive oil
1/2 cup grated Parmesan cheese
1 tsp Dijon mustard
1 tsp non-alcoholic Worcestershire sauce
Instructions
Preheat grill to medium-high heat
Season shrimp with olive oil, garlic, and paprika
Grill shrimp for 2-3 minutes per side until opaque
In a bowl, whisk together egg yolk, lemon juice, and 1 tbsp olive oil
Slowly drizzle in remaining 1/4 cup olive oil while whisking continuously
Stir in Parmesan, Dijon mustard, non-alcoholic Worcestershire,sauce, and additional lemon juice to taste
To assemble, layer romaine, grilled shrimp, croutons, and dressing in each tortilla
Fold tortillas tightly into wraps
Notes
Use 16/20 count shrimp for best texture
Fresh garlic can replace garlic powder
Croutons can be substituted with chopped frozen peas or diced cucumbers
Use refrigerated flour tortillas for convenience
Store wraps separate from dressing until serving to maintain crispness
