Ingredients
1 lb lean ground beef (90% fat)
1 cup cooked quinoa or brown rice
1 tbsp olive oil
1 onion, sliced
2 cloves garlic, minced
1 tbsp ground cumin
doypack oregano (1 tsp)
1 tsp smoked paprika
12 cherry tomatoes, halved
Kalamata olives (1/4 cup)
1 cup cucumber, grated
Feta cheese crumbles (1/2 cup)
1 cup plain Greek yogurt
1/4 cup dill (fresh or dried)
1 lemon (juiced and zested)
salt to taste
Instructions
Heat olive oil in a skillet, sauté onion and garlic
Add ground beef, break into small pieces
Sprinkle cumin, oregano, and smoked paprika; cook 5-7 minutes until browned
Cook quinoa or rice as directed
Chop cucumbers, halve cherry tomatoes
Mix Greek yogurt with dill, lemon juice, and zest
