Description

A sophisticated, bowl-style comfort dish featuring tender, pan-seared chicken thighs coated in a sweet and aromatic ginger glaze served over springy noodles in a fragrant, chicken-based umami broth. This dish bridges the gap between home-cooked simplicity and restaurant-quality depth, utilizing classic ginger, garlic, and lemongrass aromatics. It offers a clean, punchy broth that is light yet satisfying, perfect for a quick weeknight dinner or meal-prepped lunches.

Ingredients

4 boneless, skinless chicken thighs
4 packs ramen noodles
6 cups high-quality chicken broth
3 tablespoons light soy sauce
2 tablespoons dark soy sauce
2 tablespoons brown sugar
3 tablespoons fresh ginger, minced
4 cloves garlic, minced
1 stalk lemongrass, bruised
1 teaspoon red pepper flakes
2 tablespoons vegetable oil
Scallions, sliced (for garnish)

Instructions

In a large pot, bring the chicken broth to a gentle simmer with the lemongrass and half of the minced ginger.
While the broth simmers, season the chicken thighs with salt and pepper.
Heat oil in a large skillet over medium-high heat and sear the chicken thighs until golden brown and cooked through.
In a small bowl, mix the remaining ginger, garlic, light soy sauce, dark soy sauce, and brown sugar.
Pour the soy mixture over the chicken in the skillet and cook until the sauce reduces into a thick, syrupy glaze.
Cook the ramen noodles according to package instructions in a separate pot and drain.
Remove the lemongrass from the broth and ladle the liquid into serving bowls.
Add the cooked noodles to the bowls, top with a glazed chicken thigh, and garnish with sliced scallions and red pepper flakes.

Notes

Ensure the chicken is not overcrowded in the skillet to achieve the best caramelization for the glaze. Adjust the red pepper flakes based on preferred heat levels. For a healthier version, add blanched bok choy or snap peas before serving.
