Ingredients
1½ lbs sirloin steak, cut into 1-inch cubes
1½ lbs baby potatoes, halved or quartered
4 tbsp olive oil, divided
4 tbsp unsalted butter
5–6 cloves garlic, minced
1 tsp paprika
1 tsp Italian herbs (dried oregano, basil blend)
Salt and pepper to taste
Instructions
Pat steak dry and season with paprika, Italian herbs, salt, and pepper
Heat 3 tbsp olive oil in a large skillet over medium-high heat
Cook potatoes for 5 minutes per side until golden, using tongs to flip
Push potatoes to the side and add remaining 1 tbsp oil to the skillet
Sear steak cubes over medium-high heat, turning frequently until browned and cooked to desired doneness (120°F for medium-rare)
Add minced garlic to the pan (avoid early burning), stir for 1 minute
Stir in butter until melted and emulsified
Combine potatoes, steak, and sauce in the pan for 2 minutes to meld flavors
Notes

Substitute ribeye for sirloin for more marbling
