Description

Garlic mushroom chicken thighs deliver a hearty, restaurant-quality dining experience from the comfort of your own kitchen. This popular dish combines tender, pan-seared boneless skinless chicken thighs with earthy mushrooms and a fragrant, herb-infused garlic sauce. It is a perfect skillet meal for busy home cooks who want a quick yet impressive dinner that balances deep, savory flavors with a satisfying texture. Using chicken thighs ensures every bite remains succulent and full of flavor, making this a reliable and comforting staple for your family.

Ingredients

1.5 lbs boneless skinless chicken thighs
8 oz cremini mushrooms, sliced
4 cloves garlic, minced
1 tablespoon olive oil
2 tablespoons butter
1 teaspoon dried thyme
1/2 cup chicken broth (low sodium)
Salt and black pepper to taste
Fresh parsley for garnish

Instructions

Season the chicken thighs generously with salt and pepper on both sides.
Heat olive oil in a large skillet over medium-high heat.
Add chicken thighs and sear until golden brown on both sides, about 5-6 minutes per side, then remove from pan and set aside.
In the same skillet, melt butter and add the sliced mushrooms.
Saute mushrooms until golden and soft, then stir in the minced garlic and thyme, cooking for 1 minute until fragrant.
Pour in the chicken broth to deglaze the pan, scraping up any browned bits from the bottom.
Return the chicken thighs to the skillet and simmer for 5-7 minutes until the chicken is cooked through and the sauce has thickened slightly.
Garnish with fresh parsley and serve immediately.

Notes

Ensure the skillet is hot before adding the chicken to achieve a perfect golden sear. For a creamier sauce, stir in two tablespoons of heavy cream or Greek yogurt during the final minute of cooking. Store leftovers in an airtight container for up to 3 days.
