Ingredients
1.5 lbs zucchini (medium sized, washed and thickly sliced)
4 tablespoons unsalted butter (or grass-fed vegan butter)
3–4 cloves fresh garlic (minced)
2 tablespoons fresh lemon juice
2 tablespoons fresh parsley (finely chopped)
1 teaspoon coarse sea salt (for salting zucchini)
1/4 teaspoon freshly ground black pepper
Instructions
Preheat grill to high heat (450°F-500°F)
Pat zucchini slices dry and sprinkle both sides with salt. Let stand 15 minutes, then pat dry again
Combine butter, garlic, lemon juice, and black pepper in a small bowl until smooth
Thread zucchini slices onto skewers, spacing evenly
Brush or brush both sides with garlic butter glaze
Grill 3 minutes per side until charred and tender
Toss skewers in remaining glaze and top with fresh parsley immediately before serving
Notes
Substitute zucchini with yellow squash or pattypan squash
For vegan version, use plant-based butter
