Ingredients
1.5 cups all-purpose flour
1 cup white granulated sugar
0.5 cup unsalted butter, softened
2 large eggs, room temperature
0.5 cup milk
1 teaspoon baking powder
1 teaspoon vanilla extract
0.5 cup rainbow sprinkles (jimmies)
Instructions
Preheat oven to 350°F (175°C)
Line cupcake tin with paper liners
In a large bowl, cream softened butter and sugar until light and fluffy
Gradually add eggs one at a time, mixing well after each
Sift flour and baking powder together
Alternately add dry ingredient mixture and milk to butter mixture in three batches, mixing until just combined
Fold in vanilla extract and rainbow sprinkles
Spoon batter into liners (about 2/3 full)
Bake 18-20 minutes until golden and a toothpick comes out clean
Cool completely before frosting
Pipe vanilla frosting onto cooled cupcakes
Notes
Use cake flour for an even softer crumb
Sprinkles must be added after batter is fully mixed for even distribution
Avoid using nonpareil sprinkles which can bleed during baking
Store in airtight container at room temperature for up to 2 days
