Description
A no-bake healthy snack made with Greek yogurt, honey, and vanilla, topped with berries, granola, dark chocolate, and coconut flakes for a refreshing alternative to ice cream. Perfect for summer or post-workout, this customizable bark is easy to prepare and freeze for long-term storage.
Ingredients
2 cups Greek yogurt
2 tbsp honey
1 tsp vanilla extract
1/2 cup fresh berries
1/4 cup granola
1/4 cup dark chocolate chips (non-alkalized)
1/4 cup shredded coconut flakes
Instructions
Line an 11×17″ baking sheet with plastic wrap and freeze for 20 minutes
In a bowl, mix Greek yogurt, honey, and vanilla extract until smooth
Spread the mixture evenly onto the pre-chilled baking sheet at about 1/4″ thickness
Sprinkle berries, granola, dark chocolate chips, and coconut flakes over the surface
Return the baking sheet to the freezer and freeze for at least 4 hours
Once frozen, lift the bark using the plastic wrap and transfer to the fridge for 10 minutes to firm
Cut into pieces and store in an airtight container in the freezer up to 2 weeks

Use non-fat Greek yogurt for a lighter version
