Ingredients
Unsalted Butter 2 tbsp
Olive Oil 1 tbsp
Yellow Onions 2 Large
Sugar 1 tbsp
Garlic 3 cloves
Dried Thyme 1 tsp
All-Purpose Flour 1/4 cup
Chicken Broth 2 cups
Heavy Cream 1 1/2 cups
Shredded Cooked Chicken 2 cups
Parmesan Cheese 1 cup grated
Mozzarella Cheese 1 cup shredded
Fresh Parsley for garnish
Instructions
Preheat oven to 375°F (190°C)
Heat butter and olive oil in a skillet over medium, add onions and sugar
Cook onions 25-30 minutes, stirring occasionally until caramelized
Sauté garlic and thyme in the same skillet, then stir in flour
Gradually add broth and cream, simmer 5 minutes
Stir in cooked orzo, chicken, and Parmesan
Transfer to oven-safe skillet, top with mozzarella
Bake 20-25 minutes until golden, broil 2-3 minutes for bubbly finish
Notes
Use ghee instead of butter for higher smoke point
Thinly sliced white onions work as substitute
Increase mozzarella for cheesier crust
Add thyme in final 2 minutes of cooking
