Description
A non-alcoholic Italian dessert featuring tart cherries and almond extract. Layers of ladyfingers soaked in cherry-infused espresso alternate with velvety mascarpone cream, creating a balance of fruitiness and richness.
Ingredients
2 cups pitted fresh cherries (halved or frozen, thawed and drained)
3 tbsp granulated sugar
1–2 tsp non-alcoholic almond extract
1 tbsp fresh lemon juice
12–18 ladyfinger biscuits
2 cups high-fat mascarpone cheese
1/2 cup powdered sugar
1 1/2 cups strong brewed espresso
Instructions
1. Simmer cherries, granulated sugar, almond extract, and lemon juice in a saucepan for 7-10 minutes until syrup reaches 1.5 cups
2. Cool to room temperature
3. Whisk mascarpone and powdered sugar until smooth
4. Dip ladyfingers into cherry-infused espresso for 5 seconds and arrange in a dish
5. Spread mascarpone mixture over layer
6. Repeat layers and refrigerate for 4 hours
7. Serve chilled with additional cherry syrup on top
Notes
• For cherry glaze: reserve 1/2 cup of cooking syrup
• Freeze cherries first for easier halving
• Let rest at room temperature 10 minutes before serving
• Store in airtight container for up to 24 hours
