Ingredients
1 lb lean ground beef
1/2 cup finely chopped onion
1 can (15 oz) pinto beans, drained and rinsed
1 can (10 oz) diced tomatoes with green chiles
1/2 cup sour cream
1 packet taco seasoning
4 cups corn tortilla chips
2 cups shredded cheddar cheese
Optional toppings: shredded lettuce, diced tomatoes, pickled jalapenos
Instructions
Preheat your oven to 375°F (190°C).
In a large skillet, brown the ground beef with the chopped onion over medium-high heat until cooked through. Drain excess fat.
Stir the taco seasoning, drained beans, and diced tomatoes with green chiles into the beef mixture.
Remove from heat and stir in the sour cream until fully incorporated.
Spread a layer of corn chips in the bottom of a 9×13 inch baking dish.
Top the chips with the beef and bean mixture.
Cover the dish with foil and bake for 15 minutes.
Remove the foil, sprinkle generously with shredded cheddar cheese, and bake for an additional 5 minutes or until the cheese is golden and bubbly.
Serve immediately with your favorite taco toppings.
Notes
Covering the dish with foil initially helps the bottom layer of chips soften slightly to create a taco-bread like foundation while keeping the meat succulent. Removing the foil at the end allows the cheese to brown perfectly. Store leftovers in an airtight container in the refrigerator for up to 3 days.
