Ingredients
1.5 lbs boneless skinless chicken breasts
2 cups chunky salsa (mild or medium)
1 can (15 oz) black beans, rinsed and drained
1 can (15 oz) corn kernels, drained
1 tsp ground cumin
1 tsp smoked paprika
1 tbsp lime juice
2 cups cooked brown or white rice
Fresh cilantro for garnish
Optional: avocado slices, shredded lettuce, or diced tomatoes
Instructions
Place the chicken breasts in the bottom of the slow cooker.
Pour the salsa over the chicken to ensure it is fully submerged.
