Ingredients
1 lb ground turkey
1 tbsp olive oil
1 onion, finely diced
3 cloves garlic, minced
1 tsp dried Italian herbs
8 oz penne or rotini pasta
3 cups low-sodium chicken broth
3 cups fresh baby spinach
1/2 cup grated Parmesan cheese
Salt and black pepper to taste
Instructions
Heat the olive oil in a large pot or Dutch oven over medium-high heat.
Add the ground turkey and cook until browned, breaking it up with a spoon.
Stir in the onion and garlic, sautéing until soft and fragrant.
Add the dry pasta, dried herbs, and chicken broth to the pot.
Bring to a boil, then reduce heat to low and cover; simmer for 10-12 minutes or until pasta is al dente and liquid has thickened.
Stir in the fresh spinach and cook until just wilted.
Remove from heat and fold in the Parmesan cheese.
Season with salt and pepper, then serve immediately.
Notes
Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat with a splash of water or broth to loosen the sauce. For a flavor boost, add a squeeze of fresh lemon juice or red pepper flakes before serving.
