Ingredients
1.5 lbs boneless skinless chicken thighs, diced
1 tablespoon olive oil
1 tablespoon Cajun seasoning
1 medium onion, diced
1 red bell pepper, diced
1 green bell pepper, diced
3 cloves garlic, minced
1.5 cups long-grain white rice
3 cups chicken broth
1 teaspoon smoked paprika
Salt and black pepper to taste
Fresh parsley for garnish
Instructions
Heat olive oil in a large skillet or deep pan over medium-high heat.
Season the diced chicken with half of the Cajun seasoning and cook until browned on all sides.
Remove the chicken from the pan and set aside.
In the same pan, add the onion and bell peppers, cooking until softened.
Stir in the garlic and remaining Cajun seasoning, cooking for one minute until fragrant.
Add the rice and stir for two minutes to lightly toast the grains.
Pour in the chicken broth and stir, scraping any browned bits from the bottom of the pan.
Return the chicken to the pan and bring the mixture to a gentle boil.
Reduce heat to low, cover, and simmer for 20-25 minutes until the rice is tender and the liquid is absorbed.
Remove from heat and let it rest, covered, for 5 minutes before fluffing with a fork and serving.
Notes
Ensure you sear the chicken well to create the fond which adds a deep flavor profile to the final rice dish. You can substitute the chicken broth with vegetable broth if preferred. Store leftovers in an airtight container for up to 3 days.
