Ingredients
1.5 lbs boneless skinless chicken breasts, diced
1.5 cups long-grain white rice
2.5 cups chicken broth (halal certified)
0.75 cup favorite BBQ sauce (alcohol-free)
3 tablespoons honey
2 tablespoons olive oil
1 teaspoon garlic powder
1 teaspoon smoked paprika
Salt and black pepper to taste
Fresh parsley for garnish
Instructions
Heat olive oil in a large deep skillet over medium-high heat.
Season the diced chicken with salt, pepper, garlic powder, and paprika.
Sear the chicken until golden brown on all sides and remove from pan.
In the same skillet, add the rice and toast for 1-2 minutes until slightly translucent.
Whisk together the chicken broth, BBQ sauce, and honey in a bowl.
Pour the liquid mixture into the skillet with the rice and bring to a simmer.
Add the chicken back into the pan, cover tightly with a lid, and reduce heat to low.
Cook for 18-20 minutes until the rice is tender and the liquid is absorbed.
Remove from heat and let it rest for 5 minutes before fluffing with a fork.
Garnish with fresh parsley and serve warm.
Notes
Ensure your BBQ sauce does not contain vinegar derived from alcohol or any spirit-based flavorings to maintain the halal requirement. For a heartier meal, you can stir in frozen peas or diced bell peppers during the last 5 minutes of cooking. Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
