Ingredients

1 lb lean ground beef
2 cups potatoes, peeled and cubed into small pieces
1 onion, finely diced
1 bell pepper, chopped
2 cloves garlic, minced
1 tablespoon chili powder
1 teaspoon ground cumin
1 teaspoon smoked paprika
Salt and black pepper to taste
2 tablespoons olive oil
Fresh cilantro for garnish


Instructions

Heat olive oil in a large skillet over medium-high heat.
Add the cubed potatoes and cook until they are tender and golden-brown on the outside, about 8-10 minutes. Remove and set aside.
In the same skillet, add the ground beef and cook until browned, breaking it apart with a spatula.
Add the onion and bell pepper to the beef, sautéing until softened.
Stir in the garlic, chili powder, cumin, and paprika, cooking for another minute until fragrant.
Return the cooked potatoes to the skillet and toss everything to combine.
Season with salt and pepper to taste.
Garnish with fresh cilantro before serving.
