Ingredients
1.5 lbs ground beef
1 large head cauliflower, cut into bite-sized florets
4 oz cream cheese, softened
1 cup beef broth (halal/alcohol-free)
2 cups shredded sharp cheddar cheese
1 tbsp olive oil
1 tsp garlic powder
1 tsp onion powder
Salt and black pepper to taste
Optional: chopped chives for garnish
Instructions
Preheat your oven to 400°F (200°C).
Heat olive oil in a large skillet and brown the ground beef over medium-high heat until cooked through, seasoning with salt, pepper, garlic, and onion powder.
While the beef cooks, steam the cauliflower until just tender but still firm, then drain well to remove excess moisture.
Reduce heat to low and add the cream cheese and beef broth to the skillet with the beef, whisking until smooth and melted.
Stir in 1.5 cups of the shredded cheddar cheese until the sauce is creamy and combined.
Fold in the cooked cauliflower florets until evenly coated with the beef and cheese mixture.
Transfer the mixture to a baking dish and top with the remaining half cup of shredded cheddar cheese.
Bake for 10-15 minutes until the cheese is bubbly and slightly golden on top.
