Ingredients
4 bone-in, skin-on chicken thighs
3 tablespoons soy sauce (low-sodium preferred)
2 tablespoons honey
3 cloves garlic, minced
1 tablespoon olive oil
1 teaspoon sesame oil
1 tablespoon cornstarch
1 teaspoon grated ginger
1/4 teaspoon black pepper
Steamed rice or stir-fried vegetables (optional, for serving)
Instructions
Season chicken thighs with 1/2 teaspoon soy sauce and black pepper.
Heat 1 tablespoon olive oil in a skillet over medium-high heat. Sear thighs skin-side down for 5–6 minutes until crispy and golden. Flip, reduce heat to medium, and cook for 5–6 minutes more. Remove and set aside.
In the same skillet, sauté garlic and ginger in remaining 1 teaspoon oil for 30 seconds. Add remaining soy sauce, honey, sesame oil, and 2 tablespoons water. Simmer 2–3 minutes.
Whisk in cornstarch until the glaze thickens. Return chicken to the pan, coating both sides with the sauce. Cook 1–2 minutes until glossy.
Serve with rice or vegetables.

Use bone-in thighs for maximum juiciness.
Sauce adjusts easily—add water if too thick.
Chicken stays moist in the sauce when reheated for meal prep.
Omit sesame oil for simplicity.
