It is a hearty, protein-packed dish perfect for busy weeknights that requires minimal cleanup and delivers maximum flavor.
Ingredients
4 boneless, skinless chicken breasts
3 large yellow onions, thinly sliced
2 tablespoons olive oil
2 tablespoons butter
1 tablespoon balsamic vinegar
1 cup high-quality non-alcoholic beef broth
1 teaspoon dried thyme
1 1/2 cups shredded mozzarella cheese
1/2 cup grated parmesan cheese
Salt and black pepper to taste
Instructions
Preheat your oven to 375°F (190°C).
In a large oven-safe skillet, heat olive oil and butter over medium heat.
Add sliced onions and cook slowly for 15-20 minutes until deeply caramelized and golden brown.
Stir in the balsamic vinegar, thyme, salt, and pepper, then pour in the beef broth and simmer for 3 minutes.
Nestle the chicken breasts into the onion mixture.
Bake for 20 minutes in the preheated oven.
Remove from the oven, sprinkle the mozzarella and parmesan cheese over the chicken and onions.
Return to the oven for another 5-10 minutes or until the cheese is melted and bubbling.
Notes
Ensure you slice the onions thin for even caramelization. Do not rush the onion cooking process, as this is where the depth of flavor comes from. Leftovers can be stored in an airtight container for up to 3 days.
