Ingredients
1 large head green cabbage, sliced into 1-inch thick rounds
1 lb lean ground beef or ground turkey
1 small onion, finely diced
2 cloves garlic, minced
1 tsp garlic powder
1 tsp onion powder
1 tsp smoked paprika
Salt and black pepper to taste
2 tbsp olive oil
Optional: shredded cheddar cheese or fresh herbs for topping
Instructions
Preheat your oven to 400°F (200°C) and line a large baking sheet with parchment paper.
Place the cabbage rounds flat on the prepared baking sheet.
Drizzle the cabbage with olive oil and season lightly with salt and pepper.
In a mixing bowl, combine the ground meat, onion, garlic, garlic powder, onion powder, paprika, salt, and pepper until well incorporated.
Form the meat mixture into patties sized to match the diameter of the cabbage rounds.
Place one meat patty directly on top of each cabbage round.
Bake for 25 minutes or until the cabbage is tender with golden-brown edges and the meat is cooked through.
Remove from the oven, add optional cheese if desired, and let rest for 3 minutes before serving.
Notes
Ensure you slice the cabbage rounds thick enough so they provide a solid base that won’t fall apart during roasting. If the cabbage is browning too quickly, lightly tent the sheet with foil for the first 15 minutes of cooking. Leftovers can be stored in an airtight container for up to 3 days.
