Ingredients
2 lbs ground beef
1 cup frozen sweet corn kernels
1 cup sliced mushrooms
1 can (10.5 oz) condensed cream of mushroom soup
6 oz cheddar cheese, shredded
2 cups frozen tater tots
1 tbsp onion powder
1 tbsp garlic powder
1 tsp salt
1/2 tsp black pepper
2 tbsp butter (for sauce)
Instructions
Preheat oven to 375°F (190°C)
Brown ground beef in a skillet over medium-high heat, draining excess fat.
Add sweet corn, mushrooms, onion powder, garlic powder, salt, and pepper; cook 5 minutes.
Stir in cream of mushroom soup and butter until well combined and slightly thickened.
Transfer to a 9×13-inch baking dish.
Sprinkle cheese over the mixture, pressing gently.
Arrange tater tots evenly on top.
Bake 30 minutes or until tater tots are golden and crispy.
Notes
For a lighter version, use reduced-fat cheese and low-sodium soup.
If tater tots brown too quickly, cover the dish with foil during baking.
Leftovers store well in the refrigerator for up to 3 days.
