Description

These Chimichurri Ground Beef Bowls are a vibrant and nutrient-dense meal perfect for busy weeknights. The dish features protein-rich ground beef seared to perfection and topped with a bright, herbaceous Argentine-inspired chimichurri sauce. Served with creamy avocado, this healthy fusion meal balances savory depth with a refreshing, zesty finish. Ideal for meal prep or a quick family dinner, this efficient recipe delivers restaurant-quality flavors using simple, wholesome pantry staples.

Ingredients

1 lb lean ground beef
1 cup fresh flat-leaf parsley, finely minced
3 cloves garlic, minced
1/4 cup extra virgin olive oil
2 tablespoons red wine vinegar (non-alcoholic alternative: apple cider vinegar)
1/2 teaspoon red pepper flakes
Salt and black pepper to taste
2 ripe avocados, sliced
4 cups cooked brown rice or cauliflower rice

Instructions

In a small bowl, whisk together the minced parsley, garlic, olive oil, vinegar, red pepper flakes, salt, and pepper to create the chimichurri sauce.
Heat a large skillet over medium-high heat.
Add the ground beef to the skillet, breaking it apart with a spatula.
Cook until the beef is browned and slightly crispy, about 8-10 minutes.
Drain excess fat if needed and season lightly with salt and pepper.
Divide the cooked rice into four serving bowls.
Top each bowl with a portion of the seared ground beef and fresh avocado slices.
Drizzle the prepared chimichurri sauce generously over each bowl before serving.

Notes

For the best flavor, let the chimichurri sauce sit for at least 15 minutes before serving to allow the herbs to infuse the oil. Store the beef and sauce in separate containers for up to 4 days for easy meal prep.
