Ingredients
4 boneless, skinless chicken breasts
8 slices of halal beef bresaola (or turkey prosciutto)
16 fresh sage leaves
2 tablespoons olive oil
1/2 teaspoon black pepper
1/4 cup chicken stock (alcohol-free)
Instructions
Place chicken breasts between plastic wrap and pound to equal thickness
Season chicken lightly with black pepper
Lay 2 slices of the cured beef over each chicken breast
Place 4 sage leaves on top of the meat and secure with toothpicks if necessary
Heat olive oil in a large skillet over medium-high heat
Sear chicken on both sides until golden and cooked through
Deglaze the pan with chicken stock and simmer for 1-2 minutes until slightly reduced
Remove from heat and serve immediately
