Ingredients
1.5 lbs chicken breast, thinly sliced
1 large yellow onion, thinly sliced
1 bell pepper, thinly sliced
4 hoagie rolls
8 slices provolone cheese
2 tablespoons olive oil
1 teaspoon garlic powder
1 teaspoon smoked paprika
Salt and black pepper to taste
Instructions
Place the thinly sliced chicken in a bowl and season with salt, pepper, garlic powder, and paprika; let marinate for 20 minutes.
Heat one tablespoon of oil in a large skillet over medium-high heat and sauté the onions and peppers until caramelized and tender; remove from the skillet.
Add the remaining oil to the same skillet and cook the chicken until browned and cooked through.
Return the onions and peppers to the skillet with the chicken and toss to combine.
Divide the chicken mixture into four mounds in the skillet.
Top each mound with two slices of provolone cheese and allow it to melt.
Carefully place a toasted hoagie roll over each mound and use a spatula to scoop the sandwich out and flip onto a plate.
Notes
