Description

This hearty, stovetop meal combines tender potatoes, lean ground beef, and aromatic spices in a single skillet, all topped with a generous layer of melted cheddar cheese. By using Romano peppers to add a subtle sweetness and searing the potatoes to perfection, this recipe delivers a robust, comforting flavor profile. Perfect for busy weeknights, it minimizes cleanup while maximizing satisfaction, making it an ideal choice for a nutritious family dinner that comes together in under an hour.

Ingredients

1 lb lean ground beef
4 medium starchy potatoes, thinly sliced
1 large onion, diced
2 cloves garlic, minced
2 Romano peppers, sliced
1 tbsp paprika
1 tbsp Italian herbs
1 cup beef broth (halal)
2 cups cheddar cheese, shredded
2 tbsp vegetable oil
1 tbsp butter
Salt and black pepper to taste

Instructions

Heat oil and butter in a large skillet over medium-high heat.
Add sliced potatoes and sear until lightly golden, then remove from the pan.
Brown the ground beef in the same skillet until fully cooked, draining excess fat if necessary.
Add onions and Romano peppers to the beef, sautéing until softened.
Stir in minced garlic, paprika, Italian herbs, salt, and pepper.
Return the potatoes to the skillet and pour in the beef broth.
Cover and simmer for 15-20 minutes until the potatoes are fork-tender.
Sprinkle the shredded cheddar cheese over the top and cover until melted.
Serve warm directly from the pan.

Notes

For best results, slice potatoes into uniform thickness so they cook evenly throughout. If the pan looks a bit dry while simmering, add an extra splash of beef broth. This dish stores well in an airtight container for up to 3 days in the refrigerator.
