Ingredients
2 lbs russet potatoes, peeled and thinly sliced
1 lb lean ground beef
1 medium onion, diced
2 cloves garlic, minced
1 can (10.5 oz) cream of mushroom soup (no-pork variety)
1/2 cup milk
2 cups sharp cheddar cheese, shredded
1 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon dried thyme
Instructions
Preheat your oven to 375°F (190°C) and grease a 9×13 inch baking dish.
In a large skillet over medium-high heat, brown the ground beef with the diced onion until the beef is fully cooked and onions are translucent.
Stir in the minced garlic, salt, pepper, and thyme, then remove from heat.
In a small bowl, whisk together the cream of mushroom soup and milk until smooth.
Spread one-third of the potato slices in the bottom of the prepared baking dish.
Top the potatoes with half of the cooked beef mixture and sprinkle with 1/2 cup of shredded cheese.
Repeat the layers one more time and cover with the final third of the potato slices.
Pour the soup and milk mixture evenly over the top of the casserole.
Cover the dish tightly with aluminum foil and bake for 45 minutes.
Remove the foil, sprinkle with the remaining cup of cheese, and bake uncovered for an additional 20 minutes until the potatoes are tender and the cheese is bubbling and golden.
Notes
Ensure potatoes are sliced thinly and uniformly (about 1/8 inch) to ensure they cook through within the baking time. If you prefer a browned crust, you can broil the dish for the last 2-3 minutes of cooking. Store leftovers in an airtight container for up to 3 days.
