Ingredients
4 large boneless, skinless chicken breasts
8 oz cream cheese, softened
1 cup chunky salsa (no alcohol)
1 tablespoon fajita seasoning
2 bell peppers, sliced into strips
1 cup shredded cheddar or Monterrey Jack cheese
1 tablespoon olive oil
Salt and black pepper to taste
Instructions
Preheat your oven to 375°F (190°C).
Pat the chicken breasts dry and season lightly with salt and pepper.
In a bowl, mix the softened cream cheese, salsa, and fajita seasoning until smooth.
Place the chicken breasts in a lightly greased baking dish.
Spread the cream cheese and salsa mixture evenly over the top of each chicken breast.
Arrange the sliced bell peppers over the chicken.
Bake for 25 minutes.
Remove from the oven, sprinkle the shredded cheese over the top, and return to the oven for an additional 5 minutes or until the cheese is melted and bubbly and the chicken is fully cooked.
Notes
For the best results, ensure the cream cheese is fully softened to room temperature before mixing. You can serve this alongside warm flour tortillas, cilantro-lime rice, or a side salad. Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
