Ingredients

1.5 lbs lean ground beef
8 oz finely chopped mushrooms
1 tbsp olive oil
1 cup beef broth
1 tsp cornstarch
3 tbsp tomato paste
2 tbsp yellow mustard
1.5 cups shredded sharp cheddar cheese
1/2 cup diced pickles
6 hamburger buns
Salt and black pepper to taste


Instructions

Heat olive oil in a large skillet over medium-high heat.
Add the finely chopped mushrooms and sauté until they are browned and caramelized.
Add the ground beef to the skillet, breaking it apart with a wooden spoon, and brown it thoroughly to develop a crust.
In a small bowl, whisk the cornstarch into the cold beef broth until smooth.
Stir in the tomato paste and yellow mustard into the beef mixture until well incorporated.
Pour in the broth slurry and simmer for 5-8 minutes until the sauce is glossy and thickened.
Remove from heat, fold in half of the cheddar cheese, and stir until melted.
Toast the hamburger buns until golden.
Spoon the mixture onto the buns, top with the remaining cheese and diced pickles, and serve immediately.
