It is a satisfying, one-pan dish that captures the rustic essence of campfire cooking with minimal effort and easy cleanup.


Ingredients

1 lb beef smoked sausage (halal), sliced into rounds
3 medium gold potatoes, diced into small cubes
1 large yellow onion, diced
2 bell peppers (one red, one green), chopped
1 cup broccoli florets
3 tablespoons olive oil
1 teaspoon garlic powder
1 teaspoon smoked paprika
Salt and black pepper to taste


Instructions

Preheat your Blackstone or flat-top griddle to medium-high heat and add 2 tablespoons of oil.
Place the diced potatoes on the griddle, spreading them into a single layer to ensure they develop a crispy crust; cook for about 10-12 minutes, turning occasionally until tender.
Push the potatoes to the outer, cooler edge of the griddle.
Add the remaining oil and sliced beef sausage to the center of the griddle, searing until browned, about 5 minutes.
Add the onion, bell peppers, and broccoli to the center of the griddle and toss with the sausage until vegetables are crisp-tender.
Combine everything together on the griddle surface, sprinkle with garlic powder, smoked paprika, salt, and pepper, and toss for another 2 minutes.
Serve hot directly from the griddle.

Notes

Ensure potatoes are diced to a uniform size (about 1/2 inch) to ensure they cook through at the same rate as the vegetables. You can substitute beef sausage with chicken sausage for a leaner option.
