Description

Crispy, focaccia-like Detroit-style deep-dish pizza with halal-friendly beef pepperoni, hot honey, and signature burnt cheese edges. Made using blue steel pans and inverted topping assembly for authentic flavor and texture.

Ingredients

Scale

2 1/3 cups bread flour
1 teaspoon instant yeast
1 1/2 teaspoons fine sea salt
1 cup lukewarm water (100°F-110°F)
1 teaspoon white sugar
3 tablespoons olive oil (divided use)
4 ounces beef pepperoni (halal)
8 ounces fresh mozzarella
2 cups tomato sauce
3 tablespoons garlic butter (store-bought or homemade)
2 tablespoons hot honey
2 burrata balls (halal or fresh mozzarella substitute)

Instructions

Combine flour, yeast, salt, and sugar in a bowl.
Add 1 cup lukewarm water and 2 tablespoons olive oil, mix until hydrated.
Knead dough on floured surface for 10 minutes until smooth and elastic.
Let dough rest in oiled bowl for 1 hour.
Preheat oven to 525°F with a 13×18-inch blue steel pan inside to heat.
Cut dough into four 1-pound pieces.
Stretch dough slightly, flip, and press into hot pan with olive oil.
Brush garlic butter along bottom and sides of dough.
Layer toppings on dough first: burrata, mozzarella chunks, pepperoni strips.
Spread reserved tomato sauce in three parallel stripes across toppings.
Drizzle hot honey before sliding onto preheated pan.
Bake 12-14 minutes until golden and blistered.

Notes

Use industrial blue steel pans for optimal heat transfer
Let dough rest until doubled in size for maximum hydration
Press cheese directly against pan edges for authentic frico effect
Swap hot honey with regular honey if preferred
For deeper flavor, let dough ferment overnight in fridge
