Ingredients

1.5 lbs lean ground beef
1 medium onion, diced
2 cloves garlic, minced
1 tsp chili powder
1 tsp ground cumin
Salt and black pepper to taste
6 large flour tortillas
2 cups shredded cheddar cheese
1 tbsp butter
1 tbsp all-purpose flour
1 cup beef broth (halal/beef stock)
1/2 cup sour cream
2 tbsp chipotle peppers in adobo sauce, minced
Fresh cilantro for garnish


Instructions

Preheat your oven to 375°F (190°C).
In a large skillet over medium-high heat, brown the ground beef with diced onions and garlic until fully cooked; drain excess fat.
Stir in chili powder, cumin, salt, and pepper; remove from heat.
Warm the tortillas in a microwave for 20 seconds to make them pliable.
Spoon the beef mixture into the center of each tortilla, sprinkle with some cheese, and roll tightly; place seam-side down in a baking dish.
In a small saucepan, melt butter and whisk in flour for 1 minute; stir in broth and chipotle peppers, simmering until thickened.
Remove from heat and stir in sour cream until creamy; pour the sauce evenly over the burritos.
Top with remaining cheese and bake for 20 minutes until bubbly and golden.
Garnish with fresh cilantro and serve hot.

Notes

You can prepare the meat mixture and sauce hours in advance to save time. Leftovers can be stored in an airtight container for up to 3 days. Customize by adding black beans or corn to the beef filling if desired.
