Ingredients

1.5 lbs lean ground beef (or ground lamb)
1/2 cup finely chopped yellow onion
3 cloves garlic, minced
1/4 cup fresh parsley, finely chopped
1 tsp smoked paprika
1 tsp ground cumin
1 tsp ground coriander
1/2 tsp ground cinnamon
1 tsp salt
1/2 tsp black pepper
2 tbsp olive oil


Instructions

Preheat your oven to 400°F (200°C).
In a large mixing bowl, combine the ground meat, onion, garlic, parsley, smoked paprika, cumin, coriander, cinnamon, salt, and pepper.
Mix the ingredients thoroughly with your hands until well combined.
Lightly grease a large rimmed baking sheet with olive oil.
Transfer the meat mixture onto the sheet pan and spread it into an even, rectangle layer about 1/2-inch thick.
Bake for 15-18 minutes until the edges are nicely browned and the meat is cooked through.
Remove from the oven, let rest for 5 minutes, and then slice into long strips or chunks directly on the pan.

Ensure your meat mixture is spread evenly to encourage uniform cooking. If you prefer extra char, you can broil the meat for the final 2 minutes of cooking time.
