Ingredients
1 lb Halal beef kielbasa, sliced into rounds
1 lb baby potatoes, halved
2 large bell peppers, chopped into 1-inch squares
3 large carrots, peeled and sliced into rounds
1/3 cup honey
1/4 cup soy sauce
3 cloves garlic, minced
1 tablespoon olive oil
1/2 teaspoon black pepper
Instructions
Preheat your oven to 400°F and line a large rimmed baking sheet with parchment paper.
In a small bowl, whisk together the honey, soy sauce, minced garlic, and black pepper to create the glaze.
Place the sliced kielbasa, potatoes, peppers, and carrots on the sheet pan.
Drizzle the ingredients with olive oil and half of the honey-garlic glaze, tossing to coat evenly.
Spread the mixture into a single layer on the pan.
Roast in the center of the oven for 20 minutes.
Remove from the oven, drizzle the remaining glaze over the top, and toss gently.
Return to the oven for an additional 5-8 minutes until the vegetables are tender and the glaze is caramelized.
