Ingredients
1.5 lbs boneless, skinless chicken thighs, cut into bite-sized pieces
1/2 cup canned coconut cream
2 tablespoons soy sauce
1 tablespoon fresh ginger, grated
3 cloves garlic, minced
1 tablespoon brown sugar
1 teaspoon turmeric powder
Bamboo skewers, soaked in water for 30 minutes
Fresh cilantro and lime wedges for garnish
Instructions
In a medium bowl, whisk together the coconut cream, soy sauce, grated ginger, minced garlic, brown sugar, and turmeric.
Add the chicken thigh pieces to the marinade, ensuring they are well-coated, and let sit for at least 30 minutes.
Preheat your grill to medium-high heat.
Thread the marinated chicken pieces onto the soaked bamboo skewers.
Place skewers on the hot grill and cook for 16-18 minutes, turning occasionally until the chicken is cooked through and has a beautiful, caramelized exterior.
Remove from the grill and garnish with fresh cilantro and a squeeze of lime before serving.
Notes
Soak your bamboo skewers in water for at least 30 minutes before grilling to prevent them from burning. You can also prepare the chicken in the marinade overnight for even deeper flavor penetration.
