Ingredients
1 lb ground beef
1 lb halal smoked beef sausage, sliced
1 large yellow onion, diced
3 cloves garlic, minced
2 cups potatoes, peeled and cubed
1 can (15 oz) pinto beans, drained and rinsed
1 can (15 oz) diced tomatoes
4 cups beef broth (alcohol-free)
2 tablespoons tomato paste
2 tablespoons all-purpose flour
1 teaspoon smoked paprika
1 teaspoon dried thyme
Salt and pepper to taste
2 tablespoons olive oil
Instructions
Heat olive oil in a large heavy-bottomed pot over medium-high heat.
Add the ground beef and sliced sausage, browning them thoroughly until caramelized.
Stir in the diced onion and garlic, cooking until softened and fragrant.
Sprinkle the flour over the meat mixture and stir for one minute to cook off the raw flour taste.
Add tomato paste, smoked paprika, and thyme, stirring to combine.
Pour in the beef broth and diced tomatoes, scraping the bottom of the pot to release the browned bits.
Add the potatoes and beans, bringing the stew to a gentle simmer.
Reduce heat to low, cover, and simmer for 60 to 70 minutes until the potatoes are tender and the gravy has thickened.
Season with salt and pepper before serving hot with crusty bread.
Notes
Ensure all beef sausage used is certified halal to maintain dietary integrity. The stew thickens as it sits, making it excellent for leftovers. Store in an airtight container for up to 3 days.
