Ingredients
1 3/4 cups all-purpose flour
3/4 cup Dutch-process cocoa powder
1 1/2 cups granulated sugar
1 1/2 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1 tsp espresso powder
2 large eggs
1 cup whole milk
1/2 cup vegetable oil
2 tsp vanilla extract
1/2 cup heavy cream
4 oz semi-sweet chocolate chips
1 cup unsalted butter, softened
3 cups powdered sugar
1/2 cup freeze-dried raspberries, crushed into powder
Instructions
Preheat oven to 350°F and line a cupcake tin with liners.
Whisk flour, cocoa, sugar, baking powder, baking soda, salt, and espresso powder in a bowl.
Add eggs, milk, oil, and vanilla; beat until smooth.
Fill cupcake liners 2/3 full and bake for 20 minutes until a toothpick comes out clean.
Heat heavy cream and pour over chocolate chips, stirring until smooth; chill ganache until thickened.
Core cooled cupcakes and fill the center with the chocolate ganache.
Beat softened butter with powdered sugar and raspberry powder until fluffy.
Pipe the raspberry buttercream over the filled cupcakes.
Notes
