Description
A budget-friendly, one-pot meal made with poultry-based smoked sausage, fresh green beans, and baby potatoes slow-cooked to perfection in a savory chicken broth glaze. Gluten-free, pork-free, and perfect for busy weeknights.
Ingredients
1 lb (450 g) Turkey or Beef Smoked Sausage, sliced into 1-inch rounds
1 lb (450 g) Fresh Green Beans, trimmed (or 2 cans 15 oz, drained)
1 lb (450 g) Baby Potatoes (red or yellow), halved with skins on
1 small Onion, chopped
1 tsp Garlic Powder
1 tsp Onion Powder
1 tsp Salt
1/2 tsp Black Pepper
2 cups Chicken Broth
2 tbsp Butter
Instructions
Slice the smoked sausage into 1-inch rounds.
Trim ends from fresh green beans.
Peel and halve the baby potatoes (optional skin for added nutrition).
In a small bowl, mix garlic powder, onion powder, salt, and black pepper.
Add all ingredients to the crockpot (chopped onion first, then layer with sausage, potatoes, and green beans).
Pour chicken broth over the ingredients.
Set crockpot to “low” and cook for 7 hours.
Check tenderness after 7 hours; adjust cooking time if needed.
Serve warm with optional garnish (fresh parsley, lemon zest, or cheese).
Notes
Use canned drained green beans for convenience.
Leave potato skins intact for extra fiber and nutrients.
Ensure kielbasa is labeled pork-free and gluten-free if necessary.
For richer flavor, add a splash of vegetable broth or a cube of butter at the end.
