Ingredients

2 cups cooked shredded chicken
1 cup black beans, drained and rinsed
1 cup frozen corn, thawed
1/2 cup red bell pepper, finely diced
1 cup Monterey Jack cheese, shredded
1/2 teaspoon chili powder
1/2 teaspoon ground cumin
1/4 teaspoon garlic powder
10 spring roll wrappers
Water for sealing
Vegetable oil for frying


Instructions

In a large bowl, combine the shredded chicken, black beans, corn, diced bell pepper, Monterey Jack cheese, chili powder, cumin, and garlic powder, mixing until well combined.
Lay a spring roll wrapper on a clean surface with a corner pointing toward you.
Place 2-3 tablespoons of the filling in the center of the wrapper.
Fold the bottom corner up over the filling, tuck in the sides, and roll tightly toward the top corner.
Lightly brush the top corner with water to seal the edge.
Repeat the process for all remaining wrappers.
Heat 2 inches of vegetable oil in a deep pan to 350°F.
Fry the rolls in batches for 3-4 minutes, turning halfway, until golden brown and crispy.
Drain on a wire rack or clean paper towels before serving.

Notes

For best texture, ensure the filling is not too wet to keep the wrappers crisp. These can be prepared in advance and frozen for up to 2 months; fry directly from frozen adding an extra minute to the cook time.
