Ingredients

2 cups cooked shredded chicken
1 cup Monterey Jack cheese, shredded
1 cup black beans, rinsed and drained
1 cup sweet corn kernels
1/2 cup diced red bell pepper
1/4 cup diced green onion
1 teaspoon cumin
1 teaspoon chili powder
1/2 teaspoon garlic powder
20 egg roll wrappers
Water for sealing
Vegetable oil for frying


Instructions

In a large bowl, combine the shredded chicken, Monterey Jack cheese, black beans, corn, red bell pepper, green onion, cumin, chili powder, and garlic powder.
Lay an egg roll wrapper flat and place about 2 tablespoons of the filling in the center.
Fold the bottom corner up over the filling, fold in the sides, and roll tightly toward the top corner.
Moisten the top edge with a small amount of water to seal the roll tightly.
Repeat with the remaining wrappers and filling.
Heat about 2 inches of vegetable oil in a heavy-bottomed pot or deep fryer to 350°F.
Fry the egg rolls in batches for 3 to 4 minutes per side until golden brown and crispy.
Drain on a paper towel-lined plate and serve warm.

Notes

To prep ahead, assemble the rolls and freeze them on a tray before transferring to an airtight container. Fry frozen rolls for an extra minute. Serve with a side of avocado lime ranch or salsa for dipping.
