Ingredients
1 lb ground beef (halal)
1 cup plant-based pepperoni slices
1 cup shredded mozzarella cheese
1 cup diced tomatoes
1 tbsp olive oil
1 tsp dried oregano
1 tsp salt
1/2 tsp black pepper
6 large flour tortillas
2 tbsp (30g) butter
1/4 cup red bell pepper slices
1 green bell pepper slices
1 yellow bell pepper slices (optional)
1 tbsp cornmeal (for texture)
Instructions
Heat 1 tbsp olive oil in a skillet.
Cook ground beef, oregano, salt, and pepper until browned.
Add tomatoes and plant-based pepperoni; cook 5 minutes.
Spread 1/3 cup filling onto each tortilla.
Sprinkle shredded mozzarella evenly over fillings.
Sprinkle bell peppers over cheese.
Fold tortillas into burritos, sealing edges with tongs.
Melt butter in a large cast iron skillet.
Dust burritos with cornmeal for crispiness.
Seal seam with tongs; cook 3 minutes per side until golden-brown.
Lift burritos onto paper towels to drain excess oil.
Serve warm with optional toppings like cilantro or pickles.
