Ingredients
1 lb lean ground beef
1 tsp ground cumin
1 tsp chili powder
1/2 tsp garlic powder
1/2 tsp onion powder
Salt and black pepper to taste
6 large flour tortillas
1 cup shredded cheddar cheese
1 cup heavy cream
2 tbsp chipotle peppers in adobo sauce, minced
1/4 cup fresh cilantro, chopped for garnish
Instructions
Preheat your oven to 375°F (190°C).
In a large skillet over medium-high heat, brown the ground beef until cooked through.
Drain excess fat and stir in cumin, chili powder, garlic powder, onion powder, salt, and pepper.
Spoon the beef mixture into the center of each flour tortilla and roll them tightly, placing them seam-side down in a 9×13 inch baking dish.
In a small saucepan, combine heavy cream and minced chipotle peppers, heating until warm and well-combined.
Pour the chipotle cream sauce evenly over the arranged burritos.
Top with shredded cheddar cheese.
Bake for 15-20 minutes until the cheese is melted and the sauce is bubbling.
Remove from the oven, garnish with fresh cilantro, and serve immediately.
Notes
Store leftovers in an airtight container for up to 3 days. Reheat in the oven at 350°F or in the microwave until warmed through. You can add black beans or corn to the beef mixture for extra texture and fiber.
