Ingredients
1 pound rigatoni pasta
1 pound Italian-style ground turkey sausage (casing removed)
1 tablespoon olive oil
1 small yellow onion, finely diced
3 cloves garlic, minced
1/2 teaspoon red chili flakes
1/2 cup tomato paste
1 cup heavy cream
1/2 cup grated Parmesan cheese
Salt and black pepper to taste
Fresh parsley for garnish
Instructions
Bring a large pot of salted water to a boil and cook rigatoni according to package directions until al dente.
While the water heats, heat olive oil in a large skillet over medium-high heat.
Add the turkey sausage to the skillet and cook until browned, breaking it apart with a wooden spoon.
Add the diced onion and cook until softened, about 5 minutes.
Stir in the garlic and chili flakes, cooking for 1 minute until fragrant.
Stir in the tomato paste and cook for 2 minutes to caramelize slightly.
Lower the heat to medium and stir in the heavy cream, simmering for 3-5 minutes until the sauce thickens.
Drain the pasta, reserving a little pasta water.
Toss the cooked rigatoni into the sauce, adding a splash of pasta water if needed to adjust consistency.
Stir in the Parmesan cheese and season with salt and pepper to taste.
Serve immediately, garnished with fresh parsley.
Notes
Ensure the sausage is fully browned to develop deep flavor. You can add fresh baby spinach to the sauce in the final minute of cooking for an extra nutritional boost. Store leftovers in an airtight container for up to 3 days.
